quick German chocolate mug cake

Guys, when I say quick, I mean quick. This recipe from start to finish takes less than 5 minutes and at the end you get a beautiful warm chocolate cake and a sense of accomplishment. Win Win, my dudes!


I created this recipe for my dad for Father's Day. German chocolate cake is his fave and since we can't be together this year to celebrate, I made an easy recipe for him to whip up at home. Love you dad!



INGREDIENTS

Cake

40 grams baking chocolate

1 Tablespoon vegetable oil

2 Tablespoons milk (I used soy milk)

1 Tablespoon sugar

½ teaspoon vanilla extract

3 Tablespoons flour

½ teaspoon baking powder


Topping (optional)

2 teaspoons sweetened condensed milk (I used a coconut version of this, found here)

2 Tablespoons unsweetened shredded coconut/desiccated coconut/unsweetened coconut chips

3-5 pecans, crushed


METHOD

Cake

1. Melt the chocolate in a microwave safe mug for 30 seconds. Stir, and if there are still chunks, microwave for an additional 10 seconds until fully melted.

2. Mix in oil, milk, sugar, and vanilla until smooth. Then stir in flour and baking powder until smooth.

3. Microwave on full strength for 1 minute and 10 seconds.

Topping

In a separate small bowl, stir together all topping ingredients and spoon over the top of the cake.
