quick and easy lentil salad

Here's a quick, easy, healthy recipe for you to make with your can of panic-purchased canned lentils. Enjoy!


1 400g can brown lentils

¼ cup extra virgin olive oil ½ tsp smoked paprika ½ tsp dried mint ½ tsp dried thyme 2 tsp brown sugar 2 Tbsp red wine vinegar

1Tbsp balsamic vinegar 1 tsp whole grain mustard Pinch sea salt Pinch white pepper ½ minced red bell pepper 1-2 Tbsp fresh parsley, roughly chopped optional: finely chopped onion or garlic

NOTE: this makes enough to heavily dress the lentils. If you prefer to go light on the dressing, simply double the amount of lentils. METHOD: 1. Drain can of lentils into a sieve and rinse with water.

2. Mix everything but the lentils, red pepper, and parsley in a jar and shake vigorously for 30 seconds. 3. In a bowl, pour dressing over lentils and stir together with red pepper and parsley. Feel free to add some crushed garlic or onion. 4. Enjoy!
